We measure the force required to break or compress the snacks (hardness), providing critical data to help manufacturers maintain texture consistency and optimize shelf life. Brittleness is evaluated by the distance the probe travels before reaching the peak force needed to break the snack—shorter distances indicate higher brittleness. Crispiness is assessed by counting the number of force peaks during fracture—the more peaks, the crispier the product. This analysis supports process improvement and helps deliver the ideal freshness and texture that consumers expect in dried vegetable snack products.
