Cheese

We offer texture and meltability testing services tailored for cheese products, including spreadability, hardness or firmness, meltability, and stretchability.

Spreadability is evaluated using a texture analyzer equipped with a spreadability rig, allowing us to measure the force required to spread soft cheeses like cream cheese and fresh cheese.

Firmness and hardness are assessed using various probes (e.g., cylindrical, conical, or ball probes), selected based on cheese type and structure—ranging from soft, semi-hard to hard cheeses.

Meltability is tested using established methods such as the Schreiber Melt Test and rheological tests, which are recognized for assessing flow and melting performance under controlled heating.

To assess stretchability, particularly relevant for cheeses like mozzarella, we utilize a cheese extensibility rig attached to a texture analyzer, enabling precise measurement of the distance and force required to stretch melted cheese.

These analyses provide critical insights for product development, quality control, and performance optimization across a wide variety of cheese types.
