We offer specialized testing services for gummy products to assess their textural properties and thermal behavior, using both a texture analyzer and a rheometer. These analyses provide critical insights into product quality, consumer experience, and formulation consistency.

Our texture analysis employs a precision texture analyzer equipped with both puncture and ball probes to capture a comprehensive range of physical properties.

Using the puncture probe, we evaluate:

  • Initial stiffness – the slope at the beginning of the force curve, reflecting the gummy’s resistance to initial deformation.
  • Hardness – the peak force required to puncture the surface, indicating surface firmness.
  • Interior firmness – the force measured deeper into the sample, revealing internal structural strength.
  • Toughness – the total energy required to penetrate the gummy, calculated as the area under the force–displacement curve.
  • Stickiness – the maximum negative force observed during probe withdrawal, representing adhesion to the probe.
  • Work of adhesion – the total energy needed to overcome adhesive forces, based on the area under the negative portion of the curve.

With the ball probe, we analyze:

  • Firmness – the maximum compressive force during deformation.
  • Toughness – energy absorbed before deformation failure.
  • Resilience – the ratio of energy recovered to energy applied, indicating the gummy’s ability to bounce back.
  • Instant springback – the immediate height recovery after compression, reflecting elasticity.

In parallel, we conduct melting behavior analysis using a rheometer under small amplitude oscillatory shear conditions. During a controlled temperature ramp, we track changes in the material’s storage modulus (G′), loss modulus (G″), and gap displacement to characterize the gummy’s structural response to heat. A significant decline in G′ or gap displacement indicates the melting point, offering critical insight into the product’s thermal stability and suitability for storage and distribution.

Combined with our texture analysis, these rheological tests provide a detailed, quantitative assessment of gummy product performance—supporting product development, quality assurance, and shelf-life optimization.
